Pomegranate Mojito Recipe

Twist to the classic mojito, this Pomegranate Mojito recipe has fruity tart pomegranate juice that adds the perfect sweet, tangy, and tart flavors as well as a vibrant red color.

Ingredients

  • ½ cup pomegrante juice
  • ½ cup club soda
  • ½ cup ice cubes
  • 8 to 10 fresh mint leaves
  • ½ lime cut into thin wedges
  • 2 tablespoons pomegranate seeds optional

Optional

  • 1 oz white rum
  • 1 tablespoon sugar or to taste
  • 1 slice lime garnish
  • 1 sprig fresh mint garnish

Instructions

  • Add 2 to 3 lime slices, mint leaves, pomegranate arils to a glass. Squeeze some fresh lime juice.
  • With a muddler, muddle the lime, mint, and pomegranate. Optionally add sugar.
  • Add ice, pomegranate juice, and club soda. Squeeze more lime juice if you like.
  • Optional step - add the rum.
  • Stir. Garnish with a lime and mint sprig. Enjoy.

Notes

  • Sweeten to Taste: Add a little extra sugar if you prefer a sweeter sip.
  • Balance the Flavor: Adjust the mix of soda and pomegranate juice to get just the right tang.
  • Make a Big Batch: For parties, simply scale up the recipe and serve in a large pitcher for easy refills!
